Red Hot Sauce

This recipe produces a beautifully colored sauce that is both sweet and spicy.


2 cups red cayenne peppers, roughly chopped
2 cups carrots, roughly chopped
1 cup onion, roughly chopped
2 cloves garlic, roughly chopped
1 cup golden raisins
3 cups white vinegar
3 teaspoons salt


Simmer all ingredients until vegetables are tender. Drain vegetables and reserve vinegar. Process the vegetables in a food mill. Add vinegar to pepper puree until desired consistency is achieved. If you would prefer a smoother sauce, process further with a blender.
